Yinchuan city
Once a key border town, it is now bustling like never before! Yes, it's Huaiyuan.
The night market on Huaiyuan Road in Yinchuan gathers a thousand flavors with various styles. Even with friends, one usually buys only a portion of latiao (a spicy gluten snack) to share with them, and so shared are also potato cakes. This camaraderie of "buying flowers and wine to share with friends" fulfills the dreams of eighteen-year-old youths.
In the south of the city, the enticing aroma of scallion night markets drifts along Zhengyuan Street to the north, wafting into the tourist night market.
One can see the revitalization of Zhenxing Road with their own eyes. Wineries dot the landscape, a red wine town rises against the mountains, and wine aroma fills the Amnor Hotel. Zhenxing Road is also the vibrant route of the wines produced at the eastern foothills of the Helan Mountains.

Zhongwei city
Using a pole, leveraging one’s body weight to bounce and squeeze continuously, allowing the dough to gradually stretch, such effort is put in just to make a bowl of noodles. Xiaoji Water Noodle Restaurant on Gulou East Street, when it comes to history, is on par with the Drum Tower at the east end of the street. Passed down through five generations, the wooden pole has changed many times, but the taste remains the same.
Similarly, Yvy Zhenling's Haozi (Artemisia annua seeds) noodles are also an intangible cultural heritage, embodying a clever cooking technique. Through the influence of Artemisia annua seeds, a bowl of noodles transforms its original flavor. These special noodles have transformed her life, and she hopes to train more apprentices in her noodle shop on Yucai Road.

Guyuan city
In the eyes of the generous people of Guyuan, variety comes second, and quantity is the key to victory.
The magnificent Liupan Mountain stands still. Simplicity is the essence, defining the character of this land and the people's philosophy towards food.
Every city has its own Beijing Road. On Guyuan's Beijing Road, hidden treasures await to delight the palate. A whole sheep is cut into six pieces, boiled in clear water, presented whole on the table, served with two thin pancakes as a base, and accompanied by lamb broth and vegetables. This way of eating will surely astonish newcomers to Guyuan, although it may lack refinement, it is thoroughly satisfying your palate. After indulging in meat, there's a carb feast of potato buns, sesame buns, local soft buns, fried buckwheat donuts, and oat noodles to choose from.
Heading out of the West Gate along the ancient city wall of Gaoping city from the Han Dynasty (206 BC-AD 220), there's a hidden gem of a small eatery beloved by food connoisseurs. Its appearance may deter many, but those with a taste for it always relish it.
