The Ningxia Hui autonomous region started its dehydrated vegetable industry as early as the 1980s.
Dehydrated vegetables, also known as rehydrated vegetables, are a type of dried vegetables made by processing fresh vegetables through washing, drying and other methods to remove most of the water content while retaining their vitamins, trace elements and other nutritional components. The aim is to preserve the original color, trace elements and nutritional components of fresh vegetables while making them easy to transport and store. In recent years, dehydrated vegetables have been increasingly used in convenience foods, seasonings and snacks.
Huinong district of Shizuishan city and Pingluo county are Ningxia's main areas of dehydrated vegetable production. With superior natural conditions and a climate conducive to growth, the selenium-rich soil in these two areas also allows the agricultural produce to contain abundant and comprehensive nutritions.
The dehydrated vegetable industry in Ningxia has been steadily developing. With expanding export scales and improved economic benefits, it has become an important industry in the region, helping farmers increase income, boosting business efficiency and promoting rural economic development.
